What is tabbouleh?
Tabbouleh is probably one of my favourite Eastern mediterraean recipes. If you haven’t tried it, you’re in for a treat- it’s like a citrussy, herb salad and all the flavours pair together perfectly with a decent glob of hummus for good measure! Traditionally, this dish is made with Bulgar Wheat which can be quite heavy on our tiny stomachs. This recipe uses cauliflower rice for a great, low calorie, gluten free version of tabbouleh. Pair with grilled chicken to make sure you get enough protein into your meal.
Low carb tabbouleh with grilled chicken
Ingredients
1 medium chicken breast per serve
1/2 medium head of cauliflower, riced (approx 4 cups)
8 ounces cherry tomatoes, quartered
1/2 cucumber, finely diced
4 scallions, green onions, finely sliced
2 cups fresh parsley, roughly chopped (approx 2 large bunches)
1/3 cup fresh mint leaves, roughly chopped
2 lemons, zested and juiced
1/4 cup olive oil
salt, to taste
Directions
Add your favourite seasoning to chicken breast and grill until cooked through. Put to one side.
You can choose to either rice your own head of cauliflower or buy premade cauliflower rice from the supermarket produce section. To make cauliflower rice, simply blitz the chopped head for a few seconds in the food processor then wrap in paper towels and wring out any excess water.
Mix cauliflower rice with remaining ingredients together in a bowl. Serve with a slice of lemon, some hummus and topped with chicken breast.
